Lily is the eldery dog that lives across the street. She is so cute and we have become good friends. Brandon and I watched her for like a week about a month ago and we really bonded. She is so sweet and loves it when I take her on walkes. Her fluffy white furr is so soft. She is my new little buddy.
Brandon and I have been trying to go to the humane society at least one a month to volunteer with the animals. January we walked the dogs, so this month we wanted to play with the cats. The cats were so adorable and there was even a little kitten in there. I haven't held a kitten in the longest time so I was in heaven. We had so much fun there on Monday. I took a picture of one of the cats we really liked.
Tonight I made a dinner that I really loved. I think it had to do with the fact that it was so colorful and pretty, and that there were tons of sweet potatoes in it. If your interested here's how I made it. 1. Roast cubed sweet potatoes, carrots(I found cool yellow, orange, and red one at the store), and one small red onion. Toss in olive oil, salt pepper, and fresh thyme first. Roast for about 45 mins at like 375 or 400 degrees. 2. Saute 2 cloved minced garlic, 1 peeled and cubed zucchini, garbonzo beans, and salt, pepper, paprika, and a little cayenne on a med to low heat. After about 15 mins I added the chicken stock, whole weet couscous and more salt.After that was done I topped it with my roasted vegetables and some chopped parsley. 3. I also cut up a piece of whole wheat pita bread, tossed it in olive oil, sprinkled with salt, pepper, and paprika and cooked at like 410 degrees for about 12 mins.
This meal was inspired by a really good frozen Kashi meal I had that was a vegetable lasagne, DELICIOUS!
